What Happens After Roasting?
When coffee beans are roasted, they undergo a dramatic transformation. Roasting causes chemical reactions within the beans, creating the complex flavours and aromas we all love. However, this process also traps carbon dioxide (CO2) within the beans, which is slowly released over time—a process called degassing.
Why Does Degassing Matter?
Degassing is essential for optimal flavour development. Immediately after roasting, the CO2 trapped in the beans can negatively affect the extraction process during brewing. Too much CO2 escaping during brewing can create an uneven extraction, resulting in sour or underwhelming flavours. Letting the beans rest allows the CO2 to dissipate while stabilising the flavours and aromas, giving the coffee its true character.
The Sweet Spot: 2 to 3 Weeks After Roasting
At The Wood Roaster, we recommend allowing your coffee to degas for 7 to 14 days after roasting. While you can brew coffee during this period, you’ll notice that the flavours truly come alive around the 2 to 3 week mark. This is when the beans have fully stabilised, and the delicate balance of oils, sugars, and acids in the coffee reaches its peak.
How to Store Your Coffee for Maximum Freshness
Proper storage plays a vital role in maintaining your coffee’s freshness for longer. Follow these tips:
